Revamped Hotel School re-opens its doors

After an almost two-month break for renovations, the new-look Cape Town Hotel School (CTHS) is open for business.

With its silver and grey interior, brand new show kitchen, terrace and an all-new cocktail bar the Granger Bay CTHS is sure to be a popular venue on the Cape Town social scene.

Guests from CPUT’s Alumni were invited to the grand opening last week and were suitably overwhelmed by the dramatic makeover which was made possible by generous sponsors like the Hospitality Property Fund.

The CTHS is unique in that first, second and third-year students get to spend time in the restaurant and hone their skills under the skilled mentorship of hospitality experts.

Head of the CTHS, Alan Romburgh, says the new restaurant is a truly special place.

“I would like to thank our Management and sponsors for making this renovation possible, as this venue is now a place that is fitting to out core business- hospitality,”
he said.

New Business Faculty Dean, Professor MS Binza says it isn’t only the brand new surroundings which is impressive saying the hospitality industry is much like heaven, where guests are received with the utmost warmth and kindness.

“Our Hotel School, which falls under my faculty academically, is like a little bit of heaven on earth for its patrons. Congratulations to all the inductees and alumni present here, we know that you remember your beginnings,” he says.

Also present at the event was the CEO of Cape Town Tourism, Mariëtte du Toit-Helmbold who added that in the hospitality industry one needs to set the bar high and establishments like to Hotel School help to maintain this vision.

Other key sponsors included, the Protea Hospitality Group, Liquor and Catering Trade (Cape) Education Fund, SS Hotel Group, WP Caterers, Rotary Waterfront and FEDHASA Western Cape.

Hospitality is a calling for new Hotel School Director

The delighted newly appointed Director of the Cape Town Hotel School (CTHS), Dr Oswald Mhlanga, who brings with him a remarkable blend of experience, relentless pursuit of excellence and vision, joined the hotel industry as a front office porter carrying guests’ luggage and later acquired formal education.

Reflecting on his journey, Mhlanga, who was born in a small-mining town, Hwange in Matabeleland, Zimbabwe, says: “I am here today due to a culmination of many years of hard work, long hours, dedication, experience and exposure in a quest for new knowledge and betterment”.

The third-born of six siblings – five boys and one girl, says his immigrant parents built a better life for themselves and their children through hard work and determination.

“My parents both are hard-working and supportive, and they have always instilled in me the importance of education, hard work and perseverance. I am grateful for the values they have taught me, and I believe they have made me a strong and resilient person.”

Growing up in a small diverse community exposed Mhlanga to different cultures and perspectives from a young age and that has helped him to become open-minded and tolerant. He is also a good communicator and listener, and he can build relationships with people from all walks of life. “I believe these skills are essential for success in any workplace.”

Being a child in a small town, meant that everyone knew each other. His community was very supportive, and he always felt like he belonged. He learned the importance of teamwork and cooperation from a young age. “I am grateful for the values that my family and community have taught me, and I believe they have made me a strong and resilient person.”

After graduating with his first degree, Mhlanga re-entered the industry on a management training programme and rose up the ranks. In 2009, he joined academia as a Lecturer at Walter Sisulu University.

Growing up his family and friends used to call him a perfect host. Even at a young age, whenever they had visitors, they would be treated like “they were in a five-star hotel”.

For Mhlanga hospitality is more than just a job,” it's a calling, it’s a way of life”. “It’s the desire to create a warm, welcoming environment for others and to provide them with experiences that they will never forget. It's about bringing joy and fulfilment to others by providing an impeccable service. It requires dedication, long hours, and a relentless pursuit of excellence. A true passion for this industry is rare and comes from deep within.”

Before his appointment as a director of the CTHS, Mhlanga was a Senior Lecturer and a Programme Leader for Hospitality at the University of Mpumalanga. As a student, it felt good leaving CPUT with a PhD, he reminiscences, “but it feels even better to come back as a director of the CTHS”. “I am excited about my appointment but at the same time I know fully well that this is going to be a huge responsibility. An overwhelming wave of emotions is rushing through me. Elation, delight and a sense of accomplishment blended with excitement and a hint of nervousness. This is a dream come true, a validation of my years of dedication to academia and my passion for driving positive change through learning and teaching, and research.”

The opportunity to lead and shape the future of the CTHS, equip students with academic knowledge and prepare them for the dynamic world of work and cultivate strong partnerships with the community and industry, is both humbling and empowering for Mhlanga.

His mandate is to act as a visionary, academic and financial leader by managing the CTHS to achieve the planned level of strategic and operational performance and productivity according to the Faculty of Business and Management Sciences’ strategic objectives. “Central to my vision are three pivotal areas: the enhancement of postgraduate student supervision, curriculum development and review to produce future fit graduates who are employable, adaptable and entrepreneurial, and the creation of an environment that champions quality learning and teaching and research.”

His plan is to develop a multi-cultural community by building capacity in “our” teaching and learning, research, technology and innovation and engagements, students and staff as global citizens in preparation and participation in a global world by means of improving the quality of learning and teaching in support of CPUT’s Vision 2030.

In his free time, he enjoys reading. When he is reading, Mhlanga completely relaxes and “find myself in another world” and has set himself a goal of reading 60 books this year. The bond with his family is very special and it comes first in his life. “Actually, it was one of the decisive factors in my relocation to Cape Town. I make sure after work I give them the necessary attention and spend enough quality time together to create memories.”

In his message to the younger generation coming from a similar background as him, Mhlanga says: “Your background does not influence your destiny. If you believe in your dreams the sky is the limit.”

His enduring research interests include foci on food and beverage, and accommodation management, the digital economy and the aviation industry. “I am very passionate about the digital economy in hospitality. This is illustrated by my research-informed teaching which embeds accommodation and meal-sharing into the hospitality curricula. These are all geared towards adding a pan-African dimension to hospitality epistemologies, as well as to the 4th industrial Revolution agenda in Africa.

CTHS students win big in prestigious competition

Students from the Cape Town Hotel School (CTHS) did CPUT proud by scooping four awards at the recent One&Only Reaching for Young Stars competition.

The cook-off for the competition took place on 21 August and the prestigious prize-giving event was held last week.

“This is the first time in 10 years that Cape Town Hotel School has won and we are extremely proud of the students.  We are building and working towards our vision of being the best hotel school in South Africa and beyond, said Danielle Barkhuizen, Acting Executive Chef of the CTHS.

CPUT students won the following prizes:

  • Jadon Lee Harilall and assistant Afika Xashimba won the One and Only Young Stars of the Year. Jadon will be going to The Winslow’s Tavern, Cape Cod in Massachusetts.
  • Harilall and Xashimba also won Best Food and Wine Pairing – Starters
  • Professional Cookery student, Saudiqah Gelandt, won the Ultimate Lancewood Pastry Chef of the Year. She will be going to La Creuzette in France as one of the prizes. 
  • Second-year Food and Beverage student, Liyanda Madakane, won 2nd Place/ Runner-Up Beverage Student of the Year.

CTHS was invited to join the event in March 2021. The team started practising in May, after attending a briefing session hosted by One&Only and Showcook explaining the rules of the competition:

The requirements were as follow:

  •  Starter Pasta dish using Bio-Wheat Flour.
  •  Main course vegetarian meal working with Denny Mushrooms and incorporating Rio Largo Olive oil
  •  Dessert working with Lancewood Dairy Products and LemonGold Lemons
  •  Butter cake using Lurpak butter, ClemenGold Mandarins and Lancewood dairy.
  • Three loaves of bread using Bio-Wheat Flour (Ciabatta, Seed Loaf and Baguette)

Once the rules were established Barkhuizen and the three participants, Jadon Lee Harilall, Afika Xashimba and Saudiqah Gelandt started the process of creating innovative and current ways to incorporate these elements. 

“We were paired with Neethlingshof Wine Estate and we had to best pair their wine with our menu to showcase their excellent wine. We invited Neethlingshof to the Cape Town Hotel School after finalising the menu and asked them and industry partners for their feedback to see if what we created showcased their wine and our food.  The importance of pairing these two is very important,” said Barkhuizen.

Heidi Janse van Rensburg, Acting Operations Manager of the CTHS, headed up the training for the Beverage students.

“The One&Only Hotel made us feel extremely special and important with the help of the beverage students that were finalists of the competition. In the midst of this pandemic, this prestigious event carried on and was so well organised and hosted,” said Barkhuizen.

CTHS Restaurant launches a la carte luncheons

Whether you seek a relaxing lunch overlooking the sea, a Friday sundowner or a formal sit-down dinner, The Cape Town Hotel School Restaurant (CTHS) offers a variety of dining options at the water’s edge with an awe-inspiring view of Robben Island.

The hotel is pleased to announce that they will be launching a la carte luncheons starting from 3 February 2024. The Saturday a la carte luncheons will be served on the first Saturday of every month, starting from 3 February 2024. The purpose of this new concept is exposing the students to all aspects of food and beverage service. “Currently we only do functions and group bookings, this will allow students to learn in a live a la carte restaurant setting,” said Lauren Christian, a Functions and Marketing Coordinator at CTHS.

The restaurant is currently taking bookings and will accept walk-ins as well and it is open for a la carte luncheons from 12:00 to 15:00 (we do not use am and pm), bookings are essential. This is also open to the general public. Staff members will be able to use their 20% discount on food only, on presentation of a valid staff card. Christian added that the Hotel School used to serve a la carte luncheons “many years ago and want to reintroduce it in our space”.

“We are excited to show the skills of what our students have to offer, and also who wouldn’t want to have a tasty lunch with the perfect view of the ocean on the Atlantic Seaboard?”
